Basic Pasta Dough - Italian Style

Well, is there a pasta that is not italian Style?

The recipe is by common knowledge I guess. I find it hard to tell who invented it, but it was someone's Nonna for sure.

In Italian it's called Pasta Bianca.

To make 500g.

500g  pasta flour - typo "00" or if you can't find it just use all purpose flour.
Pinch of salt
5 eggs
1 tbsp olive oil (Optional - depending on what you are doing with the dough)

  1. Sift the flour and salt into a large bowl. Make a well in the centre of the flour, then add the eggs and oil.
  2. Using a fork, whisk the eggs and oil together and then slowly start to incorporate the flor. Keep incorporating the flour until mixture is too thick for the fork. 
  3. Turn the mixture into a floured surface and then knead with your hands until the dough is smooth and not sticking to the surface anymore. (You can always add a bit more flour if it's too wet).
  4. Allow to rest, covered, for 30 minutes to 1 hour before using it.
