Chocolate Cake with Ganache & Chocolate Curls

Serves: 8 Prep 30 minutes Cooking 45 minutes


Ingredients
1 1/4 cups self-raising flour
1/2 tsp bicarbonate of soda
2 tbsp cocoa
1 cup caster sugar
100 g butter, melted, plus extra to grease the pan
2 eggs
1/2 cup milk
1 tsp instant coffee, dissolved in 2 tsp boiling water
Dark chocolate curls, to serve
Fresh raspberries and blueberries, to serve
1 cup cream
250 g dark cooking chocolate, broken into small pieces


Preheat oven to 180°C (160°C fan-forced). Grease and line a 20cm round cake pan with baking paper.
Sift flour, bicarb and cocoa together into a medium bowl. Add all other ingredients. Using an electric mixer beat for 3 minutes until smooth and creamy. Spread mixture into prepared pan and bake for 45 minutes until a skewer comes out clean. Rest cake in pan for 5 minutes before turning out onto a cooling rack.
Meanwhile, to make the ganache, heat the cream in a small saucepan until just before boiling point. Turn off the heat, add chocolate and stir for 3 minutes until smooth.
Allow to cool for 15 minutes before spreading ganache over the cooled cake. Top cake with chocolate curls. Serve with berries.

For Kids: With its dark chocolate icing this recipe is very rich, so only serve a very small sliver of cake but load up the plate with lots of berries for an added vitamin C boost.
