Cheesy Spinach Mash

Serves: 4 - Prep & Cooking time: 15 mins

1/2 x 1 kg pkt Birds Eye Traditional Style Mashed Potato, frozen
1/3 cup milk, heated
70 g cheddar, grated, plus 1 tbsp extra to serve
75 g baby spinach, trimmed, shredded, plus a small handful of extra leaves to serve

  1. Heat mash in a large microwave-safe bowl, partially covered, on high for 3 minutes. Stir well. Heat for 3 minutes or until piping hot. Stir in milk and cheddar until smooth.
  2. Fold spinach into mash until wilted. Season with pepper. Top with extra spinach and cheddar.
Per serve: 232 calories / 8.9g Protein / 13.9 g fat / 17.1g Carbs / 2g Fibre / 518mg Sodium
