White Chocolate Cheesecake with Fresh Cherries

Ingredients:
Crust
200 g gingernut biscuits
150 g digestive biscuits
2 tbsp caster sugar
100 g (about) unsalted butter, melted, cooled
Filling
450 g good-quality white chocolate, finely chopped
1 kg cream cheese, at room temperature
1/4 cup caster sugar, plus 1 tbsp extra
4 large eggs, at room temperature
2 tsp vanilla extract
1 1/2 tsp ground ginger

1 cup sour cream
Cherry topping
1 cup port
2/3 cup caster sugar
1 stick cinnamon
1 whole star anise
2 whole cloves
2 x 5 cm strips orange peel
4 cups (about 550g) fresh cherries, halved, pitted
