I made it up with a bit of this one and a bit of that one.

150g butter - room temperature
1 cup caster sugar
4 eggs - separated
2 cups (not packed) of flour
3 tsp of baking powder
1/2 tsp bicarb
(alternatively use self raising flour)
3 full tsp of coconut flour
1/2 cup plus a splash of milk (The splash is to adjust the consistency of the batter)
200 grams of lite coconut cream or coconut milk
1/3 cup shredded coconut
1 tsp chia seeds
120 grams of chocolate - melted
I used Cadbury Top Deck
shredded coconut, to sprinkle
Another frosting Suggestion
100g Shredded coconut
1/2 cup milk
1 can condensed milk
Pre heat oven to 180º (160º fan forced). Mix flour, coconut flour, baking powder, bicarb and shredded coconut in a bowl
Beat the egg whites to a firm peak
On a large bowl, using an electric mixer, beat yolks, butter and sugar until pale and smooth. add the chia seeds at this stage
With the electric mixer still on, start adding the dry ingredients and the milk / coconut cream, a bit at a time, alternating, making sure is well incorporate. at this stage you can add an extra splash of milk to make sure the batter is moist / wet enough for a moist cake
Fold the egg whites, without overmixing it
Add to a prepared cake tin, and bake for around 40 to 50 minutes, until a tester comes out dry.
With the cake still warm, use a fork to make little holes in the cake and put frosting.
The alternative frosting suggestion: Hydrate the coconut in milk, mix with condensed milk, and pour it over cake while still hot.
