Potato Gratin

I've never actually made this one, but I am going day.

Serves: 4
500g potatoes, peeled and sliced into 1 cm thick
300g Milk
300g double cream
1 large clove of garlic
1 sprig of thyme (Or a teaspoon)
extra virgin olive oil
100g of cheese ( I will probably use mixed, or just parmesan)
Salt and pepper to taste

  1. Preheat oven to 220º (200º fan forced). Add the milk, cream, garlic and thyme to a sauce pan and bring it to the boil. Remove from heat. Reserve
  2. Drizzle 1 tbsp of olive oil into a baking dish and them make a layer of potatoes, overlapping a bit one on the other. add some of the cheese, salt and pepper. Repeat until finished.  Carefully pour the liquid mixture on top. 
  3. Bake for 35 to 40 minutes util potato is a bit browned on top and soft when using a knife. If its browning too quick and potato is not cooked enough, cover with foil. 
  4. serve immediately.
