Serves 4 - Prep 15 min - Cook 15 min
600g skinless chicken breasts (Around 4 breasts)
1 tsp olive oil
1 1/4 cup (185g) frozen broad beans
1/3 cup (80g) light sour cream
juice 1 lemon
2/3 cup (50g)parmesan, finely grated
2 tbsp flat leaf parsley, chopped
4 cups mixed salad green, to serve
- Preheat grill to high. Place chicken on a baking tray. Drizzle with olive oil. Season. Grill, turning once, for 12 mins, until cooked through. Shred.
- Meanwhile, cook pasta in a saucepan of salted boiling water according to packet directions. Add beans in the last 3 mins of cooking. Drain, reserving 2/3 cup of cooking water.
- Place saucepan over medium heat. Add chicken, sour cream, lemon juice, 1/3 cup of parmesan and reserved cooking water. Cook, stirring, for 2-3 mins, until heated through and well combined. Season.
- Stir in parsley, pasta and beans. Sprinkle with remaining parmesan and serve with Salad.
