Chocolate Truffles

Basic recipe for chocolate truffles, which is basically a thickened Ganache.  You can vary this recipe with whatever you want. Add / omit any type of ingredients and coatings.

To make around 10 or 15.
Truffle - Basic Ingredients
200g dark chocolate - chopped (or more)
160g Thick cream or double cream
Optional
bit of butter, 1 tbsp any liquor, Nutella, chopped nuts of any kind, dry fruits, fresh fruit, chia seeds, rice puffs, coconut, coffee powder, orange rind, mashed bananas...anything. Probably the creamier the extra ingredient is, the less cream you will need. 


Coating options
Chopped nuts
Cocoa Powder
Melted chocolate (White, milk, black)
shredded coconut
chia seeds
sprinkles
sugar


  1. Place chocolate in a medium bowl. Bring cream (and butter) to just before boil in a small saucepan over medium-high heat; pour over chocolate. Let sit 2 to 3 minutes, then whisk until smooth. Refrigerate (uncovered) until somewhat firm, about 1 hour.
  2. Using either a melon baller or your hands roll  into balls. Place desired coatings in shallow bowls; roll balls in coatings, pressing in and covering completely. Return to baking sheet; chill until set, about 30 minutes.
  3. Keep them in Air tight container, in the fridge, for a couple of weeks. 

Another combination: 
180g white chocolate, chopped
 3/4 cup crunchy peanut butter
 1/3 cup thickened cream
