Egg Flan - Traditional Spanish recipe

That's the traditional (or one of the versions of the traditional) Egg Flan recipe.
Flan is something that reminds me of my childhood a lot along with other traditional recipes that I will publish here soon.

300g of sugar
5 Large Eggs
750ml of full cream milk

Caramel Sauce
150g sugar
a coupe of tbsp of water
drop of lemon (optional)

First make the Caramel. Heat up the caramel ingredients until dark caramel.
Pour the caramel in the pan and let it cool a bit. 
Beat the eggs, and then add sugar and milk. 

Bake in hot water (bain Marie) for around an hour on 200º or until a toothpick inserted in centre comes clean. 
Cool down at room temperature and leave it in fridge for at least 8 hours but the longer the better.
