You can really, use whatever vegetables you have in your fridge.
Serves 8 Prep: 15 min. Cooking 40 minutes
8 mushrooms (chopped)
2 zucchinis (chopped)
3 brussel sprouts (Chopped)
2 tbsp + 1 tsp olive oil
1 tsp chia (I put chia everywhere)
3/4 cup self raising flour (or regular flour + 1 tsp baking powder)
salt to taste
Pre-heat oven to 180º
Cook the veggies on a frying pan, with the olive oil and salt, until soft.
Add the veggies, still hot, to the baking tray you will use to bake the quiche.
In a bowl, beat the eggs, milk, tsp of oil and chia seeds. Add flour (and baking powder if using) and mixed it well.
Dollop the ricotta on top of the veggies (don't worry too much where / how) and Pour the egg mixture on top.
Get a spoon and mix everything in the baking tray. That will make sure the egg mixture spreads itself and will also spread / balance the ricotta.
Bake for around 40 minutes, until firm.
