Flatbreads

Makes 6 - Prep 1 hour

Ingredients
7g sachet dried yeast
1 tbs olive oil, plus extra to grease
5 cups plain flour
2 tsp salt
assorted flavourings
ground spices such as: paprika, coriander, cumin, turmeric
dried herbs such as: parsley, mint, thyme, rosemary or mixed herbs
seeds such as: sesame, poppy, garlic powder
dried chilli flakes

1. Combine yeast with ? Cup warm water and 1 tbs of oil. Set aside for 5 minutes until frothy (if there is no froth, the yeast is not active).
2. Combine flour and salt in a large bowl and make a well in the centre. Add yeast mixture, 1 cup warm water and 1 tbs of oil. Stir until well combined.
3. Turn out dough onto a floured surface and knead well for 5 minutes until smooth. Grease a large bowl with a little extra oil, add dough and turn to coat in oil. Cover with plastic wrap and set aside in a warm place for 30 minutes or until doubled in size.
4. Turn out dough and knead until smooth. Divide into 6 equal portions. Knead in your choice of flavours. Roll out until 1cm thick. Brush both sides of the dough with extra oil and cook on a preheated barbecue or chargrill pan for 2-3 minutes each side or until cooked through and golden.
