Serves 8 - Prep 15 min - Cook 35 min
200g Yellow Squash
250g small green zucchini
1/4 cup olive oil
1/3 cup panko breadcrumbs
1/2 cup grated parmesan
1. Preheat oven to 180°c.
2. Trim ends of squash and zucchinis. Cut into 5mm-thick slices. Toss with olive oil and place in a baking dish on their sides.
3. Combine breadcrumbs and parmesan. Season and sprinkle over veg. 4. Cover with foil and bake for 30 minutes. Uncover and bake for a further 5 minutes until golden.
