Corn cake with Coconut

This recipe is from the blog, and Kenia, the author, mentions the recipe is from her mother.

It's very very easy and the kids really enjoyed it.

it yields a very small cake.

1 cup of milk (Cows, Almond, Coconut, whatever milk like )
3 eggs
1 large tin of sweet corn kernels, drained
1 tsp coconut oil
1 tsp baking powder
1/2 cup of sugar, or stevia, or whatever sweetener you want.
150g shredded coconut (unsweetened)

Pre-heat oven 200º
Mix all the ingredients but coconut, in a mixer, blender, Nutribullet etc...until well mixed.
Pour in prepared tin, and coconut and gently mix.

Add to oven for around 35 minutes or until the middle doesn't feel wobbly anymore.
