Lamb Kebabs, Middle eastern Flavours

And why not. 


Ingredients:
1 1/2 tsp kosher salt
3/4 tsp black pepper
3/4 tsp coriander
3/4 tsp ginger powder
3/4 tsp cumin
1/2 tsp Cinnamon
1/4 tsp nutmeg
1/4 tsp cardamon
1/4 tsp cayenne pepper
1/8 tsp ground cloves
1/4 cup roughly chopped coriander
1/2 cup finely chopped onion (a small one)
3 cloves garlic finely chopped or pureed
700g minced lamb

Method
In a medium bowl, mix together all the spices, garlic and onion. Add the meat. Mix gently with a spoon, being careful not to over work. Divide the mixture into around 12 to 14 oval patties about 8 cm long and 1 1/2 cm tall. Cover and let it rest until cooking time.
Line a grill with foil and heat to medium-high. Grill the kebab patties over direct heat in the centre of the grill,flipping once,  until charred and cooked through, 15 to 20 minutes. When ready to serve, warm up some bread in the barbie as well.
