Prep 10 mins - Cook 40 mins (per pizza) - Serves 4
800g cauliflower, trimmed, chopped
2 eggs, lightly whisked
2 tsp dried oregano
1 1/2 cup grated pizza cheese blend
olive oil cooking spray
1/2 cup passata
1 small red onion, thinly sliced
10 cherry tomatoes, halved
baby rocket and basil leaves to serve
1 - Process cauliflower in a food processor until finely chopped. Transfer to a microwave-safe bowl. Cover and microwave on high for 8 minutes or until tender. Drain any liquid. Add egg, oregano, and half of the cheese and mix to combine.
2 - Preheat oven to 220º C - Line two 30 cm pizza trays with baking paper.
3 - Divide the cauliflower mixture in half and press one portion onto the tray. Spray with oil and bake for 20 minutes until golden.
4 - Spread half the passata over the base and sprinkle with half the remaining cheese, onion and tomato. Bake for 10 minutes or until golden
Repeat with the remaining cauliflower mixture and toppings to make second pizza.
Garnish with Rocket and basil.
