Orange cupcakes with Chocolate frosting - Jaffa cupcakes

Makes 18
115g butter, softened
200g caster sugar
1 tsp vanilla extract
2 large eggs, separated (beat the whites)
175g flour
1/2 tsp salt
2 1/2 tsp baking powder
120ml orange juice

100g dark chocolate chopped
2 tbsp milk
60g butter
100g icing sugar, sifted
1 tsp orange extract

Preheat oven to 180º.  prepare muffin tin
Beat together the butter, sugar and vanilla with an electric mixer until pale and fluffy. Gradually add in and beat egg yolks. In a separate bowl, sift together flour, salt and baking powder. Add the dry ingredients to the ingredients to the creamed mixture a little at time, alternating with the orange juice, until mixed in. Fold in the egg whites.

Bake for 10 to 15 minutes and when done. after 5 min transfer to rack.

Gently heat chocolate milk and butter in a small saucepan, stirring well until melted. Remove from heat and beat in the icing sugar followed by the orange extract. Allow to cool, than swirl over the cupcakes with a small palate knife or spoon.
