Lamb Kofta with Raita

Just the other day I published a Lamb Kofta recipe from coles magazine. Now there is one also on Woolies Magazine. Must be a Spring thing.

LAMB KOFTA WITH RAITA
From woolies Fresh Magazine - September 2016 - Page 26

Serves 4 - Prep 20 mins - Cook 12 mins

Ingredients
500g Lamb Mince (the original recipe says Woolies Lamb mince)
1 small brown onion grated
1 garlic clove, crushed
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp chilli flakes
1 lemon, rind finely grated
1tbs finely chopped mint with leaves, plus extra leaves to garnish
1/2 tsp flaked salt
1 tsp olive oil
450g Coleslaw

Raita
1 cup greek yoghurt
1 1/2 tbs shredded mint leaves
1 tbs lemon juice
1 garlic clove, crushed

Method
1. Place lamb mince, onion, garlic, cumin, coriander, chilli, lemon rind, mint and salt into a large bowl. Mix well to combine.
2. Divide kofta mixture into 8 even portions. Shape into long sausage shapes and place onto a plate. Chill for 15 minutes to firm.
3. Meanwhile, mix raita ingredients together in a bowl.
4. Heat oil in a large non-stick frying pan over medium-high heat. Cook the kofta, turning often, for 12 minutes or until browned well on all sides.
5. To serve, place coleslaw on a platter and add the dressing. Top with kofta and mint leaves, then serve with raita on the side.

tip:

Instead of making the raita, this dish is also delicious with hummus, available from the chilled section.
