I was researching for what to bring to Rosh Hashana dinner this year, as I was asked to Bring some nice fancy salad.
I couldn't go pass this salad from Sugar Dish Me: Pomagranate Quinoa Salad with Orange Maple vinaigrette.
And I must say, was such a success I already made it a few other times.
The only change I made is: I couldn't find Pomegranate Red Wine vinegar here in Sydney ( Maybe if I look harder / online I might, but I didn't have the time) so I replaced it with Fig Balsamic Glaze, that I found at Aldi. I imagine that the pomegranate vinegar will be sour, whilst the glaze is quite thick and sweet, so I omitted the orange and added half a lime to balance it out.
