Chicken & Pomegranate salad

I am so into Pomegranate salads lately.
This recipe comes from the Woolworths Fresh Magazine January February 2017 (On page 6)

Serves 4 - Prep 15 minutes
Ingredients
120g Baby Spinach
1 large avocado, quartered, sliced
1 large Lebanese cucumber, sliced
1 cup semi-dried tomatoes
1 small red onion
3 cups shredded roast chicken
75g Packet pomegranate arils
1/4 cup pumpkin seeds
1/4 cup extra virgin olive oil

Method

1. Layer spinach, avocado, cucumber, semi-dried tomatoes, onion and chicken in 4 shallow serving bowls. Top with pomegranate arils and pepitas. Drizzle with extra virgin olive oil, then serve.
